1 ½ cups all purpose flour
2 tablespoons superfine sugar
1 tablespoon baking powder
1 teaspoon baking soda
Pinch salt
1 cup ricotta cheese
4 large eggs
Finely grated zest of 1 orange
1 cup orange juice
1 stick butter

½ cup maple syrup
2 oranges, segmented
Finely grated zest of 1 orange
½ teaspoon cinnamon

1 cup natural yogurt

Combine the dry ingredients in a large bowl and make a well in the center.

In a separate bowl or jug, whisk the ricotta, eggs and zest together until smooth. Gradually whisk in the orange juice then pour into the dry ingredients and whisk to a smooth batter; take care not to over-mix.

Heat a little butter in a non-stick skillet over a medium heat then add large spoonfuls of the batter, leaving space between each. Cook for 2 minutes until bubble start to form on the surface, and the undersides are golden. Flip the pancakes and cook for a further 1 to 1 ½ minutes. Transfer to a baking sheet and keep warm. Repeat with the remaining batter.

Heat the maple syrup, orange segments, orange zest and cinnamon in a small saucepan over a medium heat. Heat gently for 5 minutes to infuse the syrup.

Serve the pancakes with the syrup and a spoonful of yogurt.
